"A blend of 100% spontaneously fermented beer from our last three coolship seasons -- 2022, 2021, and 2020. We brew SPON with Hill Country well water, Texas-grown malted barley and raw wheat, and aged hops from our barn.

We chill the wort overnight in our coolship allowing it to come into contact with naturally occurring yeast from the night air. From there, the beer ferments spontaneously without adding any yeast. After one to three years of maturation, we blend the barrels and naturally condition the beer in bottles.

The result is a beer that's distinctly Texan in origin and unique to a time, place, and people."
